    Oregon is the home of Tillamook cheese. They make a chedder full of orage cheddery goodness. The most important feature of cheddar cheese is that it melts into stringy molten goo with a delicate toastiness.

    As cheddar ages, it gets sharper. The folks at Tillamook pull out cheeses at mild, medium and sharp levels so that everyone can get the kind of cheese they like. So, pick your favorite, grab a few other ingredients and try this delicious sandwich.

    1. Grate cheese

    2. Slice bread 1/3 to 1/2 inch thick

    3. Heat pan

    4. Sweat Shallots in olive oil

    5. Stir in budder

    6. Mix shallots into grated cheese

    7. Spread cheese mixture on a slice

    8. Cover with another slice

    9. Spread Mayo on top

    10. Put in pan mayo side down (Tricky)

    11. Spread Mayo on the new top

    12. After a minute or two, flip

    13. After another minute or two, place on cutting board

    14. Wait! You have to let the cheese set up just a bit, and then cut the sandwich in half diagonally

    Serve with chowder
